I remember eating this hot salad as a child & loving it.  Forgotten over the years as we thought the fats were not good for our waistlines.  Well, guess again!  Today with our Low Carb Way of Eating this terrific salad fits perfectly and is a must-have on my table.   Try it today and you will agree!

Ingredients:

1 head lettuce or 3/4 lb spinach (leaf, butter, romaine, lettuces work well)
6 slices bacon
2 hard-boiled eggs
1/4 small red onion sliced (or 4 green onions chopped)
3 T red wine vinegar
2 teaspoons sweetener (I use Swerve)
1/2 teaspoon salt
1/2 teaspoon pepper

Directions:

Fry bacon in a pan till crisp. Remove from grease and crumble. Tear lettuce into bite-sized pieces. Chop hard boiled eggs & add to lettuce with the onions. To hot bacon drippings add vinegar, sweetener, salt, & pepper. Stir over heat until blended & hot. Pour mixture over greens and serve immediately. (optionally – add 1/4 lb sliced mushrooms)
