If you can’t figure out what to make for dinner tonight these chicken hindquarters may just be the thing!  Legs & thighs tend to be less expensive (which is not always the case with low carb cooking) and are so flavorful!  This recipe would also be great with chicken breasts, but go ahead and try it just as it is here.

Ingredients:

2 chicken leg & thigh pieces

1/2 cup shredded Parmesan

1/2 cup grated Parmesan & Romano
1/3 cup butter – melted
1/2 teaspoon granulated garlic
1 tablespoon dried parsley flakes
1 1/2 teaspoon paprika
1/4 teaspoon Himalayan Pink Salt
1/2 tablespoon Italian seasoning

Directions:

Combine both cheeses in a small food processor.  Add spices and mix thoroughly. Dip chicken pieces in melted butter then into cheese mixture.  Place into greased glass baking pan.  Bake at 350° for 40 to 50 minutes or until chicken is thoroughly cooked inside and browned on the outside.
