Christine’s Spicy Peanut Soup

Ingredients

3/4 cup natural peanut butter (creamy works best)

1 Tablespoon coconut oil

2 chopped garlic cloves

1/2 cup tomato paste

1/8 teaspoon paprika

4 drops Tabasco

5 cups chicken broth

Green Onions & Chopped Peanuts for garnish.

Directions

In saucepan cook chopped garlic over medium heat in oil stirring until golden brown (about 1 minute)

Add peanut butter, tomato paste, paprika, & Tabasco with 1/2 cup of broth.  Stir over heat until smooth.

Stir in remaining broth.  Cover pan & simmer for 10 minutes, stirring occasionally.

Uncover soup & continue to simmer for another 10 minutes .

Skim any oil that rises to the surface.

Garnish with chopped peanuts & green onions.
