May just be the very best meatloaf you ever had!

Meatloaf

1.5 lbs ground beef
2 Tablespoons EVOO – divided
1 small onion – minced
2 large eggs
1/4 cup whipping cream
1.5 Tablespoon Worcestershire sauce
1 Tablespoon Swerve sweetener
1 Tablespoon Montreal Steak Seasoning
1.5 teaspoon Trader Joes South African Smoke Seasoning
1/8 teaspoon nutmeg
1/8 teaspoon allspice
Salt & pepper to taste
Saute onions on 1 T EVOO until soft. Mix onions with the remaining ingredients in large mixing bowl using either a hand mixer…or your hands will work too! If the mixture is too soft add 1/4 c almond flour. Spray a 9 x 13 pan with nonstick cooking spray (Trader Joes EVOO spray works very well). Bake at 375 for 40 to 50 minutes or when internal temp is 155 to 160 degrees.

 

 

Step Two: Mushroom Gravy

1/2 lb fresh mushrooms – sliced
2 Tablespoon butter
1/2 teaspoon garlic powder
1/4 teaspoon salt (or to taste)
1.5 cups bone broth – beef
1 cup whipping cream
2 Tablespoons Sherry
4oz softened cream cheese
2 teaspoons spicy brown mustard
2 teaspoons Worcestershire sauce
While meatloaf is baking saute mushrooms, add garlic powder & salt, on 2 Tablespoons butter until soft. Soften cream cheese in the microwave. Over medium heat mix 1/2 cup bone broth and sherry in a saucepan, add cream cheese and stir until melted (you may have some lumps but don’t worry – they will be gone soon!).  Add whipping cream. Pour sauce into your heavy duty blender (I love my Blendtec for these jobs) with remaining bone broth and blend until smooth. Return to pot and add mustard & Worchester sauce. Simmer to reduce & thicken.
Serve over cauliflower rice for an awesome meal!
