Who doesn’t love to munch at parties?  I know I do!  Unfortunately, so many of the items that we find offered at a party do not fit into our Low Carb Way of Eating.  So I like to bring something with me – and of course, the host/ess always LOVES to have some help! Here are a couple of great appetizer “balls” – easy & good.  Try them at your next gathering.

Green Balls

1/2 cup grated cheese (I prefer Swiss)

1/2 cup minced ham

1/2 teaspoon yellow mustard

1 egg yolk (or equivalent in a liquid pasteurized egg)

1/4 teaspoon Himalayan Pink Salt

Minced chives or parsley

Form mixture into small balls then roll in chives or parsley.  Serve on picks

Celery Balls

1 cup minced celery

3 ounces cream cheese

1/4 teaspoon Himalayan Pink Salt

Dash pepper

Few grains of Cayenne

Chopped parsley

Form mixture into small balls then roll in chopped parsley.  Serve on picks
