On a cold winter day (or just about any day), there is nothing better than tomato soup to warm your insides!  This hearty soup stands up to the cheesiest of sandwiches or makes a great side to any meal.  Rich and creamy, a tomato soup that you will want to make again and again!

Ingredients:

2 Tablespoons ounce butter
1/4 cup finely chopped ham
1 medium carrot
1 small onion
1/4 cup fresh parsley
1 bell pepper (any color-but red & orange are sweeter)
1 garlic clove
1 bay leaf
1 teaspoon thyme
1 28 oz crushed tomatoes (San Marzano are the best!)
1 quart chicken broth
1 quart heavy cream
1/2 lb butter
Salt & Sweetener to taste

Directions:

Melt butter in saucepan. Add ham, vegetables, and spices. Saute till vegetables are softened. Add tomatoes, broth, cream, and additional butter. Heat mixture. Pour 1/3 of mixture in blender or food processor, blend well. Add the remaining mixture either in 2 parts or all at once (depending on the size of your blender). Be careful with hot liquid when processing to not do too much at once, as it may overflow. Return soup to pan and heat through. Serve with grilled cheese for a super treat!
