Ingredients:

1 large can salmon

2/3 cup almond meal

1 Large egg – beaten

1/2 cup mozzarella cheese

1/2 small onion – finely chopped

1/2 cup heavy cream

2 Tablespoons lemon juice

1/2 teaspoon salt (or to taste)

1/2 teaspoon pepper

1 Tablespoon parsley flakes

2 teaspoons paprika

Thoroughly combine all ingredients.   Spray loaf pan with nonstick cooking spray.    Form into a loaf and bake at 350 F for 30 minutes.

Cucumber Sauce

2/3 cup cucumber – chopped

1/2 cup full-fat sour cream

3 green onions (tops & heads)

1 Tablespoon heavy cream

1/2 teaspoon salt

1 teaspoon lemon juice

Combine all ingredients.  Serve with the salmon loaf and ENJOY!
