Without a doubt, I LOVE a good pork roast!  Several years ago I was given the opportunity to try this dry rub giving the roast a bit of an Italian flavor.  The seasonings tend to make it very moist and of course, the taste is out of this world. Actually, this particular seasoning is good on just about any type of roast or poultry – try it out on chicken or turkey – you won’t be disappointed!

INGREDIENTS

2 Tablespoons Dill Weed

3 Tablespoons Fennel Seed

1/3 Tablespoon Oregano

1 Tablespoon Thyme

1 Tablespoon Rosemary

3/4 Tablespoon Parsley Flakes

1/2 Tablespoon Lemon Pepper

1 Teaspoon Onion Powder

3/4 Teaspoon Garlic Powder

2 Tablespoons Himalayan Pink Salt

3-4 lb. boneless pork roast

Directions

Mix together seasonings and liberally cover all sides of pork roast.  Tightly wrap with plastic or foil.  Refrigerate several hours or overnight if possible.  Roast at 350° F  for 1 hour or until center reaches 145° F.  Enjoy!
