I love the fact that cauliflower can be used so many ways.  This particular recipe is an old family favorite – updated to fit into our Low Carb Lifestyle.  I’m sure you will love it too!

 

INGREDIENTS

1 head cauliflower – cut into bite-sized pieces

1 1/4 cup Cream of Soup Swap

1/3 cup Mayo

1 cup shredded cheese

1 teaspoon curry

1/2 cup almond meal (or to cover)

Shredded parmesan cheese


Directions

Cook cauliflower in salted water until soft.  Drain well. Mix remaining ingredients & add to cooked cauliflower.  Cover with almond meal, dot with butter, and shredded parmesan.  Bake at 350° for 30 minutes.  Let cool for 5 to 10 minutes….Enjoy!
