What could be better than Potato pancakes (or Latkes)? I happen to LOVE them but of course, the main ingredient is a no-no with our low carb WOE. As we have found, cauliflower makes an awesome substitute for potato and this recipe proves to be another cauli-winner! Make sure you use enough oil for frying and be patient! They take a while and really need to be browned on one side to be able to turn easily.

INGREDIENTS

1 lb grated cauliflower
1/2 onion – grated
1/2 cup almond flour
1 teaspoon baking powder
4 eggs – beaten
1/2 cup grated parmesan
2/3 cup grated mozzerella
salt & pepper to taste

Oil for frying (I used Chosen Foods Chosen Blend )

Sprinkle cauliflower with salt and let sit for 15 minutes. Put into a colander to drain – squeeze excess moisture.

Add onion, eggs, and baking powder to cauliflower and mix well. Add parmesan & mozzarella – mix again.

Pour oil into a skillet (make certain you use enough!). Drop mixture in heaping 1/2 cup measurements. Flatten slightly & shape with a spatula. Let fry for 3 to 5 minutes or when browned on one side. Flip and brown on the second side.

Serve with sour cream. Enjoy!!
